Maharastrian Masala Bhat:
A traditional and spicy maharashtrian rice recipe which is typically prepared with combination of tendli or brinjal.... It can also be prepared with mixed vegetables like, potatoes, carrot, peas and even cauliflower....... can be served without any accompaniment... yet it tastes great with simple raita or curd....
Traditionally masala bhat recipe is always considered as a one pot meal recipe or complete meal without any side dish...... i personally often prepare masala bhat for my husband’s lunch box along with some fruits.... I typically prepare this goda masala well ahead and use it whenever I require.... trust me it is so time saving yet full of flavors and spices.....

Some important and easy tips for a perfect and flavoured masala bhaat recipe.....
firstly, it tastes great with the combination of tendli and brinjal and i highly recommend to use it if you have access to it.....
secondly, you can use pressure cooker to prepare the same recipe if you are running short of time. just add the spice mix or goda masala, vegetables and soaked rice and pressure cook it for 3-4 whistles......
lastly, i heavily recommend to use ghee for frying the vegetables and spices instead of cooking oil for authentic taste and flavour......

For goda masala ...

1 tsp oil... 1 tbsp coriander seeds... ½ tsp jeers... ½ tsp sesame til...1 star anise....¼ tsp khasakhas... 1black cardamom...½ inch cinnamon stick...5 cloves...1 tbsp dry coconut.... ¼ tsp black pepper....
Roast all a bit... Cool n then grind.... Store in a glass bottle...
For masala bhat....
1 tbsp ghee... 1 tsp raise.... ½ tsp jeers... 1 tej Patta... pinch of hang... ½ onionfinely chopped.....2 green chilli slit... 1 tsp ginger-garlic paste... 1tomato finely chopped...5-8 whole cashew... cup mixed vegetables (peas, gobi, carrot)...1 potato cubed....½ tsp turmeric.... ½ tsp chilli powder... 1cup basmati tukda or any short rice of choice.... Washed n soaked for 20 minutes... 2½ cups water... salt to taste... 2tbsp fresh coconut grated....2 tbsp coriander leaves finely chopped....
Procedure:
Heat ghee and prepare tadka......add onion, chilli and ginger-garlic paste n saute well.... . add 1 tomato... cashew and mixed vegetables.... (tendils and brinjal).... saute well..... add goda masala.... .saute on low flame for a minute.....add rice, water and salt..... stir well, cover and simmer for 20 minutes.... .add in 2 tbsp fresh coconut and coriander leaves.finally, serve masale baath with raita or tomato saaru......
